Also avnet don't seem to have any analog input addons.

Yes , seen the memec, avnet and nuhorizons boards and lots of others.

Need a board with at least a 100Mbps adc or with an addon board,
preferably 250Mbps single channel.

Also enough ram and flash to handle microblaze and similar,
16 - 32mb ram  +  2 - 8MB flash or cf slot
+ ethernet + prom + rs232 + jtag port/s + expansion connectors

leaning towards one of nuhorizons boards + addon card with LT adc
