The SMSC 91C111, can be accessed as a memory device, so just use the EMC IP,
The Suzuka board uses the very same part.

I think you are on your own for the SMSC part.  That's the nice part about
the Xilinx IP Ethernet controller--it just works in Microblaze uclinux. 
While it might be conceptually nice to have the Ethernet MAC off chip, its
not clear to me what hardware IP would be used to access it.
